Summer Fruit Compote – GF/V

I love this healthy fruit compote with my morning coconut yoghurt and granola. It also goes well with ice cream if you’re looking for a bit more indulgence.

  • 400g frozen mixed summer berries (ideally raspberries, blackcurrants, red currants)
  • 100-200ml water
  • 5 tbsp SugaVida

Put all ingredients in a saucepan and gently simmer for 15-20 minutes. Cool and refrigerate and use as a topping for porridge or serve with yoghurt, cream or ice cream.
