Homemade Granola – GF/V

I love this in the morning with coconut yoghurt or unpasteurised goat or buffalo yoghurt or homemade almond milk. I prefer mine grain free but you can incorporate gluten free oats. You can also use it as a topping for fruit compote.

  • 200g gluten free oats
  • 100g each of sunflower seeds, almonds, cashews, coconut flakes
  • 2 tsp cinnamon
  • ½ tsp vanilla
  • 1 tbsp each of flax and chia seeds
  • 6 tbsp melted coconut oil
  • 4 tbsp SugaVida
  • 50g apricots
  • 50g raisins

In a bowl mix the gluten free oats, sunflower seeds, almonds, cashews, coconut flakes, cinnamon, vanilla and flax and chia seeds. In a separate bowl add melted coconut oil. Sprinkle SugaVida into the oil and mix well. Pour over the dry mix and stir well.

Pour on to a lined baking tray and put into a pre-heated oven 160 degrees for 15 minutes. Take out, mix again and put in the oven for 10 minutes. Add the chopped apricots and raisins. Mix well. Leave to cool and serve.
