Chocolate Fondants – GF

These sensational little beauties are so easy to make, and will impress your guests no end. What’s more, they’re completely guilt free and no one will be any the wiser!

  • 150g organic chocolate
  • 150g organic butter
  • 125g organic rice flour or gluten free flour
  • 1 egg + 1 egg yolk
  • 50g SugaVida
  • 1 tsp of bicarb of soda (optional)

Melt the chocolate and butter over a bain-marie and add 40g of SugaVida until smooth and glossy (65⁰C is ideal if you have a thermometer) and leave to cool for 10 minutes. Separate two egg yolks and whisk the egg white of one egg. Incorporate egg yolk – one at a time – into your chocolate mixture using a wooden spoon/spatula/whisk.

Using a bakers’ sift, add the flour to your chocolate and egg yolk mixture while stirring constantly. Add a level teaspoon of bicarb of soda (optional). Add 10g of SugaVida. Gently fold in the whipped egg white and pour into greased ramekins and put into a pre-heated oven 180⁰C fan/200⁰C fan-free for 8 minutes. Take out, leave to cool for 4 minutes and serve.

Please note that you do not necessarily need to whisk the egg white separately. But it does make the fondants lighter.
